Day 5′s contest is over, and Vera Brazo won! Here’s her recipe: Chicken Ceasar Wrap
4 Spinach tortillas or any other flavor
1 Cup of cubed leftover roast chicken
1 Cup of favorite shredded cheese ( pepper jack, Parmesan)
4 Cups of torn leaf Romain lettuce or spinach (or combination)
Cesar Salad dressing
1.Lay tortillas on large baking sheet. Sprinkle chicken evenly over tortillas, topping with portions of cheese. Bake at 375 degrees for about 6 minutes, or until cheese is melted.
2. Remove from oven, top each tortilla with a portion of lettuce, and add salad dressing as desired. Wrap burrito-style and serve.

Chicken Fried Rice.
Beat up 3 eggs, scrumble and set aside. Cut up all leftover chicken into bite size. Cook 3 cups of white rice. frozen peas and carrots (thaw).
1. in a pan, 1 tbsp of olive oil with 1 tsp of garlic
2. add in Chicken and fry for 2 mins
3. Add thaw peas and carrots.
3. Add 1 1/2 tsp of soy sauce.
4. Stir fried the above and set aside.
In another pot, 1 tbsp of olive oil, throw in the white rice and stir fried with 2 tbsp of soy sauce for about 3 mins. Add the scrambled eggs and also the chicken stir fried. Mix all together for about 2 mins. Serve.
WHEN SHOPPING AT A SUPERMARKET, DRUG STORE, ETC., ALWAYS UNLOAD YOU PURCHASES ON THE COUNTER AND ASK THE CASHIER TO WAIT UNTIL YOU ARE FINISHED BEFORE HE/SHE STARTS SCANNING.
THEN WATCH THE SCANNED ITEMS AS THEY COME UP ON THE SCREEN — IF THERE IS ONE THAT YOU CAN SEE.

BECAUSE AN ITEM OR TWO OR THREE MAY BE SCANNED HIGHER THAN ADVERTISED.
OF COURSE, IF A SCREEN IS NOT AVAILABLE FOR YOU TO SEE AS THE ITEMS OR SCANNED OR YOU JUST DON’T WANT TO DO THAT, AT LEAST MAKE CERTAIN TO CHECK YOUR RECEIPT WHEN YOU GET HOME.
Hearty Chicken Casserole
10 slices white bread, cubed
1/1/2 cups cracker or dry bread crumbs, divided
4 cups cubed cooked chicken
3 cups chicken broth
1 cup chopprd onion
1 cup chopped celery
1 can (8oz.) sliced mushrooms, drained
1 jar (about 4 ounces) pimientos, diced
3 eggs, lightly beaten
salt and black pepper to taste
1 tablespoon butter
1. Preheat oven to 350F.
2. Combine bread cubes and 1 cup cracker crumbs in large
mixing bowl. Add chicken, broth, onion, celery, mushrooms,
pimientos and eggs; mix well. Season with salt and pepper; spoon
into 2 1/2quart casserole.

cracker crumbs and brown, stiring occasionally. Sprinkle crumbs
over casserole.
4. Bake 1 hour or until hot and bubbly. Makes 6 servings
Chicken Pot Pie
1-2 cups left over cooked chicken in bitesized pieces
1 can cream of chicken soup
1/2 c milk
1 cup or more of frozen mixed veggies
pinch of sage or poultry seasoning (optional)
1 pkg of refrigerated pie pastry (or 2 frozen pie shells)
Heat oven to temp noted on package of pastry for 2 crust pie.(If using frozen pie shells, please defrost first)
Place one pastry in bottom of pie pan. In a bowl, mix filling ingredients together. Pour into crust and cover with top crust.
Cut small slits in top of pie. You may brush the top with additional milk to give it a nice glaze. Bake according to package directions.
A lower fat/carb/calorie version would be to just use a top crust over the filling in an ovensafe caserole dish.
