When we asked for entries for our holiday cookie contest, we meant the kind of treats that humans eat, not dogs. But one intrepid reader, Wendy Bice of West Palm Beach, offered this canine holiday cookie recipe — and it proved a hit with a “judge” of the “woof, woof” variety that we recruited. If you’ve got a pooch in your house, consider making a batch.
Cool Dog Holiday Cookies
For cookie:
1 cup natural peanut butter
1 cup unsweetened apple sauce
1/2 cup canned pumpkin or
sweet potato
1/2 cup milled flaxseed
3/4 cup canola oil
6 cups rice flour
1/4 cup molasses
1/4 cup honey
3 large eggs
1 cup skim milk
1 teaspoon cinnamon
For coating (if desired):
Yogurt or carob chips (melted so they
can be spread on top)
Assorted decorative toppings, sprinkles, etc.
Preheat oven to 350°. Combine wet ingredients. Add dry ingredients to wet ingredients. Add more flour if necessary. Roll out dough to one-quarter of an inch. Cut out with various cookie cutters. Bake for 20 minutes. Turn cookies over. Bake for another 20 or so minutes until crunchy (not burnt!). Let cool on counter overnight. Top with coating if desired. (“Uncoated” are best for doggies who are watching their waistlines!)
