COCKTAIL CULTURE
By Carlos Frias
Palm Beach Post Staff Writer
The bar: Sinclair’s Lounge in the Jupiter Beach Resort
The scene: No, it’s not a private club. The resort has been fighting that reputation for nearly a decade since it went from a private club to the posh, luxurious resort where it now has two completely remodeled restaurants, including the lounge at Sinclair’s. Gone are pomp of reds and gold and drab darkness of a cigar bar, replaced with an elegant tropical flair: cream-colored granite against dark wood, travertine tiles inlaid with rustic boards, just a touch of rattan against the view of floor-to-ceiling windows to overlook its oceanside location. It’s a whole new lounge.
Signature cocktail: Forget what you know about tastes-like-perfume gin. One sip of the Gin Alohu ($14) and you’ll not only be turned on to new kind of liquor but also cocktail worth a return trip. Pomegranate liqueur, citrusy triple sec and pineapple juice all mix together with Nolet’s gin into a tangy, tropical drink that is an ocean way from that too-sweet poolside piña colada.
Other drinks: There are versions of cucumber drinks all over town, but you haven’t had a good one until you try Sinclair’s Cucumber Breeze ($9)—which is, in fact, great. There are no flavored vodkas here, only true mixology: muddled and strained cucumbers because there shouldn’t be salad in your drink, add Baracdi white run and fresh lime and pineapple juice.
Bar bites: The lounge has a separate menu from the restaurant, but it’s still blessed by the talents of executive chef Ricky Gopeesingh, whose background as a fourth-generation Indian raised in the multicultural Trinidad means his cuisine is a kaleidoscope of flavors. The Filet Sliders ($13) are cut from the same beef used in the restaurant, a healthy portion of melt-in-your mouth steak dressed in sweet-and-savory balsamic-glazed onions and blue cheese. The Fennel Spiced Grilled Shrimp ($9), served over a shooter in a salad, are as beautiful to look at as to eat.
Deals: Draft beers and well drinks are half off through happy hour, from 4 to 6 p.m.
