The scene: Located just off The Breakers’ lobby, HMF styles itself as the local epicenter of retro-cocktail cool, in one of the most stunning spaces in Palm Beach County. Internationally renowned designer Adam D. Tihany, who’s currently renovating the Beverly Hills Hotel, remained faithful to the historic Florentine Room’s bones (that incredible painted ceiling!) when he fleshed out HMF with midcentury-inspired furnishings and oversized floor lamps. Adding to the ambiance are bunny-dipping waitresses (glammed out in black dresses, red lipstick and ’40s updos) and music director Kirill Basov’s seamless mix of bossanova beats old and new.
The signature cocktail: The Mojito Royale ($13), spiked with champagne, flavored with The Breakers’ homemade lemongrass-and-Kaffir-lime syrup and floating with mint from the resort’s garden.
Other noteworthy drinks: Garnished with a raspberry, the pink Chanel #6 ($15) is a fetching ensemble of vodka, chambord and pineapple juice — the perfect toast to a girls’ night out. The delightfully tart Redhead ($14) features Kaffir-lime vodka, blood orange liqueur, cranberry juice and lime foam. And gin-and-tonic fans should try the GT ($11), an herb-y iteration of the bar standard, modernized with rosemary and Kirby cucumber.
Bar bites: Unlike other Breakers restaurants (the Flagler Steakhouse, the Seafood Bar, the Italian Restaurant), HMF doesn’t specialize in one type of cuisine. The wide-ranging menu includes sushi, charcoal-grilled pizza and several selections inspired by the gourmet food truck movement: Korean short ribs, lamb sliders and wild boar empanaditas. You’ll quickly get hooked on the complimentary roasted cashews (sweetened with maple syrup, spiced with garam masala), but save room for the Warm Onion and Reggiano Dip served with homemade Fingerling Chips ($14), as well as the Maine Lobster Garganelli in Fontina Cream ($28). The Baked Alaska ($12) is a festive, flaming finale to your meal.

Mojito Royale
1 ½ ounces Bacardi Silver rum
1 ounce lemongrass/Kaffir lime simple syrup
5 mint leaves
3 lime wedges
2 ounces Piper Sonoma champagne
Splash of club soda
Lemongrass stalk
Muddle the mint and lime with the rum and simple syrup. Add ice, shake and strain into a highball. Add Piper Sonoma, top with club soda and garnish with lemongrass stalk.
