PALM BEACH GARDENS —

It’s a super-duper special that’s making its way back onto the regular menu at Cantina Laredo’s Palm Beach Gardens location.
An 8 to 10-ounce filet of Chilean sea bass is prepared with salt, black peppercorn, garlic and a bit of lime juice, then lightly seared and topped with a roasted jalapeño beurre blanc, served with seasonal fresh vegetables.
“We used to serve this dish a lot and it was definitely one of our most popular items,’’ says Eddie Estevez, general manager. “Now that the price of sea bass is affordable again, we’re putting it back on the menu. Sea bass is a very buttery fish. Pan-searing it keeps all the moisture in the fish, and the sauce itself is to die for.”
