“It’s a nice, summer, drinking wine, and is an alternative to New Zealand sauvignon blancs. It has a little sweetness, and the crispness can handle butter-based dishes.”

PAIR IT WITH: Oven-roasted citrus salmon: a wild salmon with a citrus dill crust, topped with beurre blanc caper sauce. “The citrus essence of the preparation enhances the citrus tones of the wine. The crisp dryness of the wine cuts the omega oil and beurre blanc of the fish and the sauce, and both wine and fish meld together, neither overpowering the other.”
