Just like wine shops and chocolate shops have a special place in my heart, there’s something spectacular about olive oil shops. Hence my delight at stumbling upon Olive You More, located at Okeechobee and Military in West Palm Beach.

Bright, cheery and co-owned by the friendliest ladies – 20 minutes of hearing them talk about their products and you’ll be wanting to grab lunch with them. Olive You More opened mid-October andgets its products from Veronica Foods Company located in Oakland, Calif. Co-owned by sister-in-laws – who have known each other 32 years (“We might as well be sisters” said Lisa Wehle.).

“We always like to say we were friends first, then sister-in laws, and now (business) partners,” chimes in Connie Wehle.

Olive You More sells a variety of olive oils from several different countries, including Chile, California, Spain and Italy.

“We know what’s in our (products),” said co-owner Connie Wehle. “It’s healthy, it’s fresh and it’s good for you.”

In addition to the regular olive oils, they sell both fused and infused oils: Tuscan Herb, organic Persian Lime, Chipotle, Herbes de Provence and Garlic. They sell gourmet oils: almond, sesame, walnut and white truffle oil. And here’s where it gets really fun: the have a fairly extensive list of flavorful, unique balsamics.

These aren’t your normal balsamics. We’re talking blackberry ginger, black mission fig, cinnamon pear, espresso, maple, dark chocolate, tangerine, honey ginger, and grapefruit.

I fell for the cranberry pear white balsamic – it’s a perfect balsamic to use for a harvest salad this time of year – think mixed greens, pears, dried pomegranates and gorgonzola tossed with cranberry-pear and a olive oil (they’ll help you pick the perfect one). Tangy, bright, flavorful and deliciously zesty, it’s different and yet perfect just with olive oil. It simplified my Thanksgiving salad dressing!

By matching different fused and infused oils with their variety of balsamics, the possibilities are endless for unique, fun and flavorful combinations. All that’s missing is the actual food.
