THE DISH: Slow-roasted Chilean Sea Bass, $34

THE RESTAURANT: PRIME, Delray Beach

Prime’s rendition of the ever-popular Chilean sea bass is a lovely combination of texture and flavor. An 8-ounce piece of lightly-seared and oven-roasted sea bass is finished with a lemon beurre blanc and served over a rich mash of sweet potatoes. The fish is topped with a bright watercress and fennel salad, accented with sweet pink grapefruit. Surrounding the plate are deliciously crisp artichokes.

“Sea bass was a must on our menu,” says Steven Pellegrino, Jr., who opened Prime with his father, veteran restaurateur, Steven Pellegrino, Sr., in 2011. “The fish is very rich. We combine it with the watercress to cut the richness. This is my dad’s recipe and it’s one of our most popular dishes.”
