THE DISH: Oven-roasted citrus salmon, $21.95

THE RESTAURANT: Russell’s Blue Water Grill

Celeb Chef Charles Coe certainly knows his fish. The Lifetime Catch Clean Cook star and Russell’s Blue Water executive chef hits a homerun with this delicious and popular seafood dish. A tender fillet of wild North Atlantic salmon is coated in a crisp citrus and dill-panko crust and topped with a rich lemon and caper beurre blanc, served with buttery, smooth golden mashed potatoes and crisp French green beans.

“It’s just a really good dish,” says operating owner, Russell Beverstein. “The fact that it’s wild and not farm-raised makes a big difference. It really reflects our whole ocean-to-table and farm-to-table concept. People are eating a lot of salmon and this preparation is one of the most popular on our menu.”
