If you’ve got time for only one starter dish at the quite civilized bar at III Forks steak house in Palm Beach Gardens, let it be the Duck and Waffle ($7.95). It’s the appetizer that makes a vigorous case for one of the best bites you can get at a bar in Palm Beach County.

A perfectly cooked medium-rare medallion of duck sits atop a beautifully curved homemade waffle, just above a bedding of creme fraiche and pistachios. The demure, layered “waffle” is finished with a port wine-soaked cherry.

In one bite, savor each of the four beautiful elements: the duck, the waffle, the creme fraiche, the dusting of pistachios. Enjoy it between sips of a III Forks cocktail, say, the Botanical Garden ($10), infused with crushed mint and muddled cucumber.

Then order another one.
