THE DISH: The Heritage Pork Belly “Reubenesque,” $14

THE RESTAURANT: Max’s Harvest, Delray Beach

Call it a deconstructed Reuben – totally deconstructed. This one has no use for corned beef. Instead, the talented Chris Miracolo, executive chef at this farm-to-table concept eatery, makes this delectable Reuben with homemade corned pork.

Miracolo, pork belly fiend that he is, completes his creation with Swiss cheese, butter-toasted rye croutons and a sauce of stout beer mustard and homemade Thousand Island dressing. He serves it alongside homemade sauerkraut.

THE INFO: Max’s Harvest is at 169 Northeast 2nd Avenue, in the Pineapple Grove dining district, Delray Beach; (561) 381-9970; MaxsHarvest.com
