This week’s bar: 3800 Ocean Lounge in the Marriott Singer Island Resort & Spa

The scene: Since devising a democratic kitchen, where a staff of co-chefs from such varied backgrounds as Jamaica, Mexico, Boston, Florida and Colorado design a menu under executive chef Larry LaValley’s guidance, 3800 Ocean has become a fusion of world-class food in a world-class location, overlooking the water on Singer Island. The separate lounge, with a smaller-portioned menu but all the flavor, makes for a relaxed after-work spot with three separate areas: a bar, an indoor terrace of comfortable dark leather banquettes, and a more private nook of white leather boots, all with a side view of the ocean through floor-to-ceiling windows.

Signature cocktail: It’s always a good thing when you can’t quite place the ingredients that make a cocktail like the Caribbean Sunset Martini ($14) such a pleasure to sip. For the record, it’s the ginger liqueur with the overproof rum and peach nectar that gives this drink it’s physical and flavorful layers.

Other notable drinks: Are you a Margarita savory fan? The Jalepeño Cucumber Margarita counters the sweetness of a traditional margarita with a salt-rimmed edge that also includes minced jalapeños for an unexpected bite. Want a happy hour-inspired dessert? Instead try the White Chocolate Martini, with crisp chocolate shavings floating above the white-chocolate liqueur, vanilla vodka, Frangelico and coconut rum.

Bar bites: Order, basically, everything on the menu in one dish, the Nine Bites tasting ($36), a sort of over-sized Bento box of delicacies, each as delicious as the next: lobster fritters, lump crab cake, tomato-feta salad, short-rib sandwich, duck prosciutto, grilled shrimp cocktail, butternut squash gnocchi, pan-roasted day-boat scallop and a rich lobster bisque. Makes for a great sharing plate and each item can also be ordered individually.

Deals: The 5 to 7 p.m. happy hour includes half off on drinks and all appetizers except the Nine Bites platter, and it also includes having your valet parking fee waived.

C O C K T A I L

Caribbean Sunset Martini

2 ounces Wray and Nephew Overproof rum

1 ounce peach nectar

1 ounce Domaine de Canton ginger liqueur

1 ounce pineapple juice

Splash of grenadine for color

Mix all the ingredients in a shaker with ice. Strain into an iced martini glass. Garnish with a thinly sliced orange wheel for a floater.
