Pamela’s Pies are like a sweet sonnet from an era gone past, a memory filled with front porches and lemonade served in big, frosted glass pitchers. Buttery, flaky crusts, sweetly formed to look like suns. Rich, creamy fillings. An afternoon delicacy, a few bites before bed. They remind you of grandma, family reunions, you on your best day.

Except that within the normal offerings of blueberry, peach and apple, Pamela Blom conjures up a modern twist, a cool, South Florida vibe that makes seeking out her pies worth it and practical. Influenced heavily by local citrus, she riffs off the key lime pie to reinvent new pies — much as she reinvented herself.

A one-time architect and lifelong baker, she learned to bake pie from her grandmother, Hattie Mae, who taught her to “use the fruit you have on hand.”

There’s the Grapefruit Rose Petal Cream, the Tangerine Cream pie created with fresh squeezed tangerine juice, and the Florida Orange pie that’s made with 8 to 10 oranges. She uses Belle Glade oranges whenever possible. And then there’s her delicious apple sweetened only with apple juice.

You can find her at area farmer’s markets or at Cakes by Lara in Lantana.

My favorite is the Grapefruit Rose Petal Cream – the tartness is tempered by the custard-like creaminess, plus the pie looks pretty on the table. I have added the pies to my parties on multiple occasions – they embody Old Florida with a contemporary twist, and are irresistible at a buffet.
