THE RESTAURANT: Graffito South This is an inventive and delicious dish from one of Wellington’s newest hot spots, Graffito South. Executive chef Dominic Zumpano sears a chili-rubbed duck breast, served sliced over a sweet and savory duck confit, beet and poppy seed risotto, and finished with a sweet and tangy balsamic reduction. The chili rub adds just the slightest hint of spice to the tender duck breast. The magenta-colored risotto is surprisingly light, finished with a crisp bite of fried onions and micro greens. “I love the balance of flavors and different textures in this dish,” says Zumpano. “Beets and duck go really well together and I wanted to give the risotto some meatiness by adding the confit to it.
