Union Supper Club’s executive chef Rich Achaia creates a dish that looks more like a work of art on a plate. Fresh ahi tuna with the perfect amount of jalapeño spice is perched atop a cake of super crisp rice surrounded by orange paprika oil, green cilantro oil and a drizzle of a sweet soy reduction. This is an appetizer dish that looks just as good as it tastes.

“People eat first with their eyes,” explains Achaia, a graduate of the culinary program at the Art Institute of Fort Lauderdale, who has worked as a personal chef for the past few years. “There is so much work that goes into this dish, there’s a lot of care and a lot of moving parts that come together on the plate … It’s part food and part art.” THE INFO: Union Supper Club, at 8 East Atlantic Avenue in Delray Beach, serves dinner from 5 p.m. until 11 or midnight, depending on business.
