Day 6: Is your meatless meal a winner?


Day 6′s contest is over and Cindy Thierry won! Congratulations. Here’s her recipe:
Black Bean Salad
2 cans (15-oz) black beans, drained and rinsed
1 cup frozen corn (thawed)
1 large tomato, diced
1 large red bell pepper, diced
1/4 cup chopped onion
1/3 cup chopped cilantro
Dressing:
1 T balsamic vinegar
1 T cider vinegar
1/2 lemon, juiced
1 clove garlic, minced
1 tsp. ground cumin
1/2 tsp. ground coriander
dash of cayenne pepper
1/2 tsp. salt
1. Combine first 6 ingredients in large bowl.
2. Whisk together dressing and pour over salad. Toss gently to mix.
Enjoy!
